Organic Milk & Dairy in Warren, Indiana (USA)
We produce Fior di latte (mozzarella), Burrata, Provolone del Golfo, Fior di latte sheets, Smoked Fior di latte (smoked mozzarella), Caciocavallo, Fior di Ricotta and Ricotta. All of our cheeses are made in our Warren location with locally-sourced, organic milk.
Fior di latte (mozzarella) can be produced in various shapes and sizes: spherical, braided or in sheets. It can be eaten fresh, but can also be used in a variety of recipes. In addition to Fior di latte, Burrata, Provolone del Golfo, Fior di latte “sheets” can be added to salami or vegetables.
The experience and skill of the master cheese maker are key factors for obtaining an excellent final product. Starting from the teachings of our ancestors, that dates back to the 5th century B.C., we have gained a proven experience and a growing cheese mastery, always remaining faithful to the pastoral tradition from which this activity originates and continuing to give life to simple, genuine and natural products with a markedly handmade imprint.
The Fior di latte (mozzarella) is the most famous cow’s milk cheese in the world. It is a typical product of the Italian region Campania and in particular of the Lattari Mountains located in the center of the Gulf of Naples. To honor our land of origin and the tradition of Fior di Latte (mozzarella), we have decided to name our dairy “GOLFO DI NAPOLI DAIRY“.
After visiting the United States and testing local organic milk, we decided to set up a new dairy in Warren, Indiana with the goal of making the experience of three generations of cheesemakers available to American gourmands.
